Miso eggplant Recipes Eat Well with Bite

Dice the eggplant into thick cubes. In a small mixing bowl, add the Red Miso Paste, mirin and sugar. Whisk to combine. Add some olive oil to a large frying pan and pan fry over a medium heat until almost soft, turning occasionally. Add the Red Miso Glaze to the eggplant and constantly stir to coat the eggplant and caramelise the glaze for 5-7.
